Charro beans, with a southern accent
Charro beans are named after Mexico's horsemen, and the dish comes out of the north, where a pot of beans with pork was a whole meal.

Two regions in one pot
The northern version is pinto beans with bacon, chorizo, tomato and chile, soupy enough for a spoon, and the beans stay whole. A charro, strictly speaking, is closer to a rodeo horseman in a fancy suit than a ranch cowboy, though everyone translates it as cowboy.
Black beans and avocado leaf are southern habits. Avocado leaf has a faint anise taste, and cooks in Oaxaca add it to black beans. Eat them beside anything grilled, or alone as a small soup.
Because of the pork bits, ours aren't vegetarian. They're braised black beans with avocado leaf, so they lean south even with a northern name.
