What holds it together
Black beans are the base of most vegetable tacos, since they bring the earthiness that roasted vegetables lack. Pickled onion brings the acid. Treat one like any other taco: salsa, lime, two hands.
The word itself is a puzzle. One theory traces it to Mexican silver miners, who called their paper-wrapped gunpowder charges tacos. It's a good story, and it isn't settled.
