Classic, fruit and smoke
Fresh chile and tomato keep a bowl close to the classic. Fruit pulls it sweet and sharp, and pomegranate has real history in Mexican cooking: it's the red garnish on chiles en nogada in Puebla. Smoke usually comes from chipotle, a smoke-dried jalapeño.
Eat them in order of strength, the mildest bowl first. Start with the smoky one and it covers everything that comes after.
Clásico has serrano, onion, cilantro, lime and tomato. Cantina is the fruit one: pomegranate, apple and mango. Humo has chipotle and grilled corn, so leave it for last.
