Viva Guacamole, the one with pepitas
Guacamole is older than the Spanish word for it. The name comes from the Nahuatl ahuacamolli, avocado sauce, and a Nahuatl-Spanish dictionary printed in 1571 already lists it.

Why it's first on the table
The recipe hasn't moved much in all that time: ripe avocado, lime, salt, and whatever the cook likes after that. Pepitas are pumpkin seeds. They add the crunch a soft dip is missing.
It usually lands in the middle of the table with chips all around, and nobody waits for the rest of the food. Good instinct, because avocado starts going brown once air reaches it.
The menu has onions and jalapeños in the bowl with the pepitas and cilantro. Totopos come with it, so you don't need a side of chips.
Viva Guacamole: questions
Why does guacamole turn brown?
Air. The flesh of an avocado browns when it meets oxygen, and lime juice only slows that down.
Is guacamole spicy?
Only as spicy as the chile the cook adds. With jalapeño that's usually mild to medium, and the avocado softens it.
