Black beans are the southern Mexican choice. In a national survey from the 1990s, about 90 percent of the home cooks asked in the south picked them first.

A bean map of Mexico

The same survey found pintos and bayos in the northeast, a sulfur-yellow bean called azufrado almost everywhere in the northwest, and a wide mix in the center. People don't switch easily: about 70 percent said they wouldn't change beans for a lower price.

Queso fresco is a young, mild cheese that crumbles and doesn't really melt, so it adds salt without turning everything stringy. How to eat it is your call. Keep them apart and pull a bit of each with every bite, or stir them together into one starchy mess. Both are correct.

Arroz con Frijoles: questions

What is queso fresco?

Fresh cheese, in Spanish: young and mild, with a little salt. It crumbles rather than melts, so it's used as a topping.

Which beans are most common in Mexico?

It depends on the region. One survey found black beans preferred in the south and pinto or bayo types in the northeast, with many kinds in the center.
