Huevos con chorizo: the red in the eggs
Mexican chorizo is raw and loose, unlike the hard cured sausage from Spain. That's why it scrambles so well: it comes out of its casing and fries.

The fat does the cooking
It's seasoned with dried chiles and vinegar, and the fat runs red as it cooks. That fat ends up in the eggs, which is where the color and most of the flavor come from.
People usually eat it with tortillas, tearing off pieces to scoop instead of using a fork. Beans on the side soak up what's left. Salty and filling, it holds you for the afternoon.
Scrambled eggs and chorizo on our menu, with avocado, queso fresco, refried beans, rice and corn tortillas for the scooping.
