Steak and eggs, in a tortilla

Arrachera is most at home in northern Mexico, where it's usually marinated, grilled and eaten in tortillas with lime, guacamole and salsa.

Breakfast versions add eggs, because a runny yolk is the sauce a grilled steak wants. Break the egg over the meat, pull some into a tortilla with whatever is on the skillet, and fold. It's a lot of food for noon.

On our menu

Two poached eggs come with the grilled skirt steak, along with poblanos, jalapeños, mushrooms and Monterey Jack. Avocado sauce, chile de árbol sauce, flour tortillas, rice and beans are on the same line, so you won't need a side.
