What's agreed on, and what isn't
One of those dining rooms says 1860 on its own menu. The broker's story puts him there in 1894, and he told it in 1942. What's agreed: an English muffin, a poached egg and hollandaise, a French sauce of egg yolk, melted butter and lemon. Everything else has become fair game.
Break the yolk first so it runs into the sauce, then cut down through every layer. Hollandaise tightens as it sits.
