A breakfast burrito, by way of New Mexico

The breakfast burrito is a New Mexico idea. A Santa Fe diner claims the first use of the name on a menu, in 1975, though people there were rolling eggs and potatoes into tortillas long before that.

Tots and a strange nickname

Burrito means little donkey, and the stories about why don't agree. Once it left New Mexico the format spread fast, since eggs and potatoes in a flour tortilla can be eaten one-handed.

Tater tots have their own history: the founders of Ore-Ida came up with them in 1953 to use up potato scraps. Inside a burrito they keep some bite when everything around them is soft. Cut it in half if you're sharing.

On our menu

Ours lists chorizo, scrambled eggs, mozzarella, tater tots, guacamole and an arugula tomato salad.
