The fried-chicken version of chicken and waffles is tied to Harlem, where a supper club served it to its late crowd from 1938. Pennsylvania Dutch cooks had already been putting stewed chicken on plain waffles for a long time.

Three American stories on one plate
Red velvet is American too: a cocoa cake that a Texas extract company helped sell in the 1940s with red coloring and recipe cards. Froot Loops, which Kellogg's launched in 1963, are pure nostalgia.
Sweet and salty is the reason to order this. Get a piece of chicken and a piece of waffle on each forkful, or you'll end up with a plate of dessert and a plate of fried chicken. It's a lot of sugar before noon, and nobody orders it by accident.
