Adobo and cactus
Adobo gives this plate its Mexican accent. The word comes from the Spanish adobar, to marinate, and in Mexico it means a sauce or paste of dried chiles, usually with vinegar and garlic. Recipes change a lot from one place to the next.
Nopalitos are strips of prickly pear cactus paddle, slightly tart with a taste near green bean, and that sharpness is what rich beef needs. It's a heavy plate and a knife-and-fork one, so go easy on the chips first.
The menu pairs them with garlic mashed potatoes, nopalitos and pico de gallo, and calls the sauce Guerrero-style adobo.
