Enchiladas verdes: the sauce is the point

Enchilada comes from enchilar, to season with chile. That tells you where the flavor is: the tortilla is there to carry the sauce.

A very old idea with a green sauce

Rolling tortillas around other food goes back thousands of years in the Valley of Mexico, and a Spanish chronicler described corn-tortilla dishes at a feast Cortés hosted. Cheese, chicken and cream came after.

Verdes means green. Green salsa normally gets its sharpness from tomatillos, so it runs tart where red sauces run deep.

It's a fork-and-knife plate, unlike most of what's around it on the menu. The tortillas soften under the sauce, as they should. If you want something crisp, you've ordered the wrong dish.

On our menu

These are filled with chicken, so they aren't a vegetarian order. Salsa verde, red onion, sour cream, sliced avocado and queso fresco go on top.
