Churros, from Iberia by way of the street cart
Churros aren't Mexican by birth. They came from the Iberian Peninsula and reached Mexico with the Spanish. One theory goes back further still, to Chinese fried dough.

Ridges, sugar and a dip
Mexico made them its own with cinnamon sugar and a street-cart habit of filling them with dulce de leche or serving them next to chocolate.
Dough gets piped through a star tip and fried, so the ridges give more surface to crisp and more places for sugar to stick. The soft inside keeps steaming, which softens the crust after a few minutes. Dip them rather than dunk them, since the sauce is rich and a little goes a long way.
The menu gives you two dips, Nutella and dulce de leche, with the cinnamon churros.
