What tinga brings to it
Tinga comes from Puebla, where an 1881 cookbook has the earliest known recipe. Today it usually means shredded chicken in a sauce of tomato, onion and chipotle, and some cooks use beef.
Flautas and taquitos get mixed up all the time. Flautas tend to run longer, and the name changes by region as much as by recipe. You eat them with your hands, dragging each one through the cold toppings on the way up.
The menu calls them crispy and serves them with lettuce, tomato, radishes, crema and queso fresco. It doesn't name the meat, so ask your server if that matters to you.
Flautas de Tinga: questions
What is tinga made of?
Usually shredded chicken simmered with tomato, onion and chipotle, which makes it smoky more than fiery. Beef versions exist too.
What's the difference between flautas and taquitos?
Mostly size and local habit. Flautas are usually longer and taquitos shorter, but the names overlap and the tortilla isn't a reliable test.
