Lighter than juice, on purpose
Those barrels are called vitroleros, and you can read the flavors by color from across the market. Jamaica, tamarindo and horchata are the common ones.
An agua fresca is thinner and less sweet than juice, because it's meant to be drunk in quantity with food. That makes it a good match for anything salty or spicy, and pineapple already has a history with pork in al pastor. Unlike the piña colada, this one leaves you room to keep eating.
Our menu calls it fresh pineapple water, and pineapple is the only flavor listed.
