A Spanish snack that stayed in Mexico
Spain has eaten it for a long time, Andalusia in particular, and it traveled with the empire to Mexico and the Philippines. In Mexico it's both a snack and an ingredient. People crumble it into a warm tortilla with salsa, stew it in salsa verde until it goes soft and chewy, or eat it straight.
Order it for the table. A whole plate of fried pork is as rich as it sounds.
The menu doesn't say whether this is skin or belly. If you want to know which kind is coming, ask your server.

How do you eat chicharrón?
On its own with lime and hot sauce, crumbled into a taco, or stewed in salsa verde, where it softens and soaks up the sauce.
