Mexican beer, with some Austrian in it

Mexican lager owes a lot to Austria. German and Austrian brewers came over in the 1800s, around the brief reign of Emperor Maximilian, and the Vienna style they brought outlasted Vienna's own.

Which one with what

Negra Modelo is the easy example: darker and maltier, based on that Vienna lager style. Pacífico comes from Mazatlán, where German brewers set up shop in 1900. The Modelo brewery opened in Mexico City in 1925, and Modelo Especial and Corona were its first beers.

Pale lagers like these work with salsa and lime because they stay out of the way. If you want flavor to match grilled beef or birria, go darker. Heineken is the Dutch outlier.
