A Texas ranch story
Homero Recio studied that history at Texas A&M in the 1980s and traced the name back to the 1930s. The first commercial stand is usually credited to Sonny Falcon, at a festival in Kyle, Texas, in 1969.
Otilia Garza, who introduced fajitas at a restaurant in Pharr, Texas, that same year, gets the credit for the sizzling plate. She'd been served melted cheese on a cast-iron plate in Acapulco. Build them as you go: a little filling, whatever's on the side, fold, eat. Overfill a tortilla and you'll be wearing it.
Vegetables are the base of ours: poblano peppers, onions, mushrooms and corn, served sizzling. Protein isn't included, so you add shrimp, chicken or steak if you want it.
