Sopes: a corn disc with a wall
A sope is a thick disc of corn masa with its edge pinched up to make a wall, so the toppings and the sauce stay put.

Pinched by hand
Sopes come from central and southern Mexico. All that pinching gives them another name in some places: pellizcadas. The appeal is texture, crisp underneath and soft on top, much thicker than a tortilla and closer to a small plate you can eat.
Beans usually go down first, since they hold the rest in place. They're finger food in theory and knife-and-fork in practice once the crema is on.
Our menu calls the base a handmade corn tortilla, with refried beans, lettuce, queso fresco, crema, chile de árbol sauce and pickled onion on it. You can add meat.

Sopes: questions
What's the difference between a sope and a tostada?
Thickness. A tostada is a thin tortilla fried crisp all the way through. A sope is thicker masa with a raised rim, and it stays soft on top.
How do you eat a sope?
With your hands if it's small and not too loaded. Otherwise use a knife and fork, because the toppings slide once you lift it.
