Smoke and pineapple, frozen
Mezcal gets its smoke from agave hearts traditionally roasted in pits in the ground. Pineapple is a good thing to set against it, because sweet fruit takes the edge off and the smoke stays.

A gentle way into mezcal
Cold dulls flavor, so a frozen drink needs a spirit that won't disappear, and mezcal doesn't. It's also an easier first mezcal than a straight pour if you're not sure about smoke.
Papalote is what mezcal makers in the mountains of Guerrero call the cupreata agave, and the name on this bottle points that way. Triple sec brings the orange a margarita normally has. The sweet comes first and the smoke comes after.
Tres Papalotes is the mezcal on ours, with triple sec, pineapple purée, lime and simple syrup.
