Spicy Mango: habanero, twice

Habanero is one of the hottest chiles in common use: from about 100,000 Scoville units and up, against a few thousand for a jalapeño.

How to drink something this hot

Mango and chile is already a Mexican pairing, sold on the street with lime and salt, and in a drink the fruit does the same job. Sugar makes the burn easier to take, and you can actually taste the chile, which is fruity before it gets hot.

Heat builds with each sip, so go slowly and eat something with it. Water won't help much, because capsaicin doesn't dissolve in it. Something creamy or starchy will, so keep the crema and the tortillas close.

On our menu

Habanero shows up twice on ours, in the Soy Valiente mezcal and in the salt, with lime, mango purée and simple syrup between them.

Spicy Mango: questions

How hot is a habanero?

Roughly 100,000 to 350,000 Scoville units, depending on the source and the pepper. A jalapeño is a few thousand.

What helps with chile heat?

Dairy and starch. Capsaicin dissolves in fat and alcohol rather than water, so a sip of water just moves it around.
