Yucatán's chile, in a tequila
Mexico protected the name Chile Habanero de la Península de Yucatán in 2010. It smells fruity and floral before the burn arrives.
With an infused tequila, the fire is in the spirit itself, so you can't steer around it the way you can with a chile-salt rim. Don't make it your first drink if you're unsure about heat. Eat something fatty alongside it, like carnitas or melted cheese. That calms it far better than more ice will.
The heat on ours comes from the bottle: Tanteo habanero tequila, with triple sec, lime and simple syrup.
