The margarita, and why nobody knows who made it first

A margarita is tequila, lime and something sweet. Swap the orange liqueur for agave and you have the version San Francisco bartender Julio Bermejo made famous around 1990.

A drink with too many inventors

The first one can't be traced. Most accounts say the 1930s or 40s, in Mexico or right on the border, with several named inventors and no proof for any of them. Margarita is also Spanish for daisy, and the daisy was an old family of cocktails, which may be the real root of the name.

Tequila has to come from blue Weber agave grown in Jalisco or set parts of four other states. Leaving out the liqueur pushes that agave forward, so you taste the spirit more than the orange.

On our menu

The menu's version is the agave kind: Vozul tequila, lime and agave, with no orange liqueur listed. Mango, passion fruit or strawberry cost extra, and it also comes by the pitcher.
