Añejo tequila has spent at least a year in barrels, under Mexico's tequila rules, and this margarita is built on it. Jefe means boss.

What a year in the barrel does
Aging changes the drink. Blanco tequila tastes of cooked agave and pepper. Time in the barrel adds vanilla and caramel notes, the ones people link with whiskey, and softens the edges.
Bartenders usually reach for younger tequila in a margarita because lime can bury the subtle stuff, so añejo is a splurge. Expect it rounder and less sharp. Try it with something rich, such as short ribs or carnitas, or slowly on its own.

What is añejo tequila?
Tequila aged at least one year in barrels. Extra añejo goes at least three years.
What's the difference between blanco, reposado and añejo?
Time in the barrel. Blanco gets little or none, reposado rests at least two months, and añejo gets at least a year.
